Smokey Chicken with Avocado Sauce + Best Labor Day Sales


Happy Friday!! I hope you all have a wonderful long weekend! Todd and I have a date night planned tonight and then we have a neighborhood get together on Sunday, but other than that, we plan on taking it easy! 

I had so many DM messages asking me to please share this smokey chicken recipe, and let me tell you, it's one everybody is going to want to make! It's so easy, super healthy, and delicious!! The smokey paprika marinade gives the chicken so much flavor and it pairs so well with the avocado sauce.

Ingredients
  • 16 ounces Chicken
  • 2 tablespoons avocado oil
  • 1/2 teaspoon sea salt
  • 1 teaspoon Smoked Paprika
  • 1 teaspoon onion powder
  • 14 ounces boneless chicken breast
  • 1 avocado chopped
  • 1/4 cup Greek Yogurt or Homemade Mayo
  • 1/4 cup chopped red onion
  • 2 tablespoons chopped cilantro
  • 1 jalapeno chopped
  • 1 tablespoon lime juice.
  • zucchini for serving with zoodles


Instructions
  1. In a small bowl combine oil, salt, smoked paprika and onion powder. Place chicken in a large zip top plastic bag and pour oil mixture over. Allow to marinate for 30 minutes.
  2. Meanwhile, make the avocado sauce by combining the avocado, Greek Yogurt, red onion cilantro, jalapeƱo and lime juice in a blender. Process until smooth. Refrigerate until ready to serve.
  3. Preheat grill pan to medium heat. Remove chicken from marinate and place on grill pan. Cook about 8 minutes per side, or until cooked through.
  4. To serve, place chicken on a plate and top with avocado sauce.

August Amazon Purchases



I love workout tanks that come with a built-in bra. I ordered this one last week, and not only is the fit perfect, but the quality is also amazing! For sizing reference, this one runs small and I went up to a medium. For more good quality, affordable workout gear check out my favorites here.





Y'all, this remote will change your lives! Todd and I canceled our cable after having this remote for less than a week, and we don't regret it one bit. I am still able to watch all of my favorite shows, Todd is still able to get his sports, and the kids can still watch all of their favorite shows as well! 



I can't believe I missed one of Colleens older books, but I ordered this one earlier this month and it was SO good! It was so good that I actually ended up reading it in one day. Also, if you are looking for more good reads, check out my new fall list here




This is the brand that makes the amazing v-neck tees that we all love. This one is just as soft and I love the swingy hem! Plus, these are great for layering and transitioning into the fall and winter. 




If you are looking for new travel bags for your kids, I HIGHLY recommend these! They were a dream for our trip earlier this month, and I loved that both kids were able to pull them through the airport by themselves. 



Another travel must-have are these packing cubes! They make vacation so much more organized and so much easier to find what you are looking for.

I cannot wait to show you guys all the AMAZING underwater pictures that we took in Turks and Caicos with this camera! I swear to y'all, I'm going to get that post up by next week, it's just taking me much longer than I had planned to write it.

Wednesday's Brain Dump


Good morning friends, and happy hump day!! 

 Todd and I celebrated 11 years of marriage this past weekend! We had already celebrated in Palmetto Bluff last month so I didn't think we would too much on our actual anniversary, but Todd surprised me by booking a little overnight trip downtown complete with flowers, dinner plans, and an overnight sitter for the kids. I was so excited and we had the best time! 


We headed out early Saturday afternoon and enjoyed walking around downtown while also hitting up a few bars for happy hour before checking into our hotel. 


What I wore

Our first stop was The Watch at the Restoration Hotel. The hotel has a really nice rooftop bar, but the patio was filled when we first arrived so we sat at the bar inside and enjoyed a cocktail. If any of you ever visit, I highly recommend ordering the Romero's Bad Habit cocktail...it's so delicious and refreshing. 


After our first cocktail it cleared out a bit and we were able to enjoy an appetizer and a glass of wine on the rooftop patio. It felt so amazing outside, and the view was incredible. 


After leaving The Watch we walked around a little more, and then headed back to our hotel to check in and get ready for dinner. We stayed at the King Charles Inn, and I can't say enough wonderful things about it. The hotel inside and out was beautiful, and the location was perfect for walking to bars and restaurants. And while we didn't do any shopping, it's just a short walk to King Street. 



Todd made us reservations at Anson, and I was really excited being that we had never been there before. 



I didn't take a lot of pictures, but Todd and I enjoyed everything we ordered. Our favorites were the beet salad, fried green tomatoes, and the fried pork chop. Clearly, we were craving all things fried...haha! 



// On Sunday, we took our new inflatable boat out for the first time. You guys, this thing is so cool, and the quality is amazing. Neither Todd nor myself could believe how nice it was for the price! And the kids had a blast, and have asked us after school the last couple days if we could take it out.

// And last, here's the recipe for the easiest, most delicious chicken carnitas ever!! So many of you guys sent DM messages on stories last night, asking what the sauce was on our bowls. It's Tessemae's creamy ranch! Todd and I discovered this stuff when we did Whole 30 back in January, and we've been hooked every since! I order mine here off Amazon because we also love her habanero ranch and I can never find it in any of our local grocery stores.
