Cooking With Caycee - Honey Sriracha Chicken Zucchini Noodles

Good morning, friends! 

I am excited to share another super easy and healthy recipe with you all today! This meal only took about twenty minutes from start to finish, and Todd and I both loved it. It was too spicy for the kids to eat so we made them chicken nuggets, fruit, and zucchini noodles. Taylor loves to eat the zoodles raw, while Carson tolerates them so he can get dessert :) 

Taylor's dress is old, but it's from Gymboree and they have a few similar ones.

10-oz zucchinis
1 tablespoon olive oil
2 cloves garlic, minced
12 oz boneless, skinless chicken breast, cut into cubes
1 tablespoon chopped scallion
White sesame, for garnishing

2 tablespoons honey
1 tablespoon Sriracha
1 1/2 tablespoons soy sauce
1 teaspoon sesame oil
1/2 tablespoon cornstarch
2 tablespoons water

Cut 1-inch off both ends of the zucchinis and use the spiralizer to make the zucchini noodles. Transfer the zoodles to two serving bowls. Add all the ingredients for the Sauce in a bowl. Whisk to mix well.
Heat up a skillet with the olive oil. Saute the garlic until aromatic. Add the chicken and stir fry until the surface turns white, follow by the Sauce. Stirring continuously until the chicken is completely cooked through and the sauce thickens. Add the scallion, stir to mix well.
Top the zoodles with the chicken, toss to mix well. Garnish with the white sesame and serve immediately.

This and That

// I found two more awesome finds on Amazon fashion this past week!!! 

This embroidered tunic dress looks almost identical to the one from Free People, but it's about 75% cheaper. To be honest, I actually prefer the fit of this one because it's not near as boxy. 

Dress runs short so I went up one size to the small and it fits perfect. 

And this little leaf romper is so adorable...and perfect for summer. And you can't beat the $32 price tag! 

Runs a little snug through the hips, and for reference, I'm wearing the small.

// My new favorite thing to cook / eat for dinner right now are taco salads. I am really trying hard to make healthy meal choices, so instead of using any kind of shell, I've been adding in a very small handful of plantain chips and around two tablespoons of one of my favorite Greek yogurt dressings. 

What I put in my taco salad....
Arugula // Black Beans // Lean Ground Taco Beef // Cucumbers // Avocado // Plantain Chips 

You can find this dressing in the cold section near the bagged salads at almost any grocery store, and I'm pretty sure I even saw it at Target the other day as well. 

// I'm pretty sure this is the best picture of all time. And Rocky seriously slept like this until we moved him at midnight. We would have let him stay, but he still gets up to relieve himself a good bit because of his diabetes and we didn't want him waking Taylor up. And yes, Rocky really likes to sleep on a pillow. Talk about a spoiled pup...ha! 

// Last Friday, Carson had a double sleepover so the next morning we all piled on the golf cart in our pj's and made a quick run to Starbucks. These three boys together are the sweetest ever. They played so great together all day and were asleep by 10:30. I have a funny feeling that things may not run this smoothly when Taylor asks to have a double sleepover ;)

And speaking of amazing, that is exactly how I feel about this Lilly dress ;)

Life Lately

Happy Friday!! 

It's been a little while since I've filled you in on what we've been up to lately. I planned to do this post yesterday, but I woke up with a sore throat and felt pretty rough. I'm feeling much better this morning, so I'm hoping it's just allergies. 

This past Sunday, I went to a baby shower for one of my dear friends. And since her sweet baby girl Caroline came early, we all got to meet her. Man I sure love a newborn, there is nothing better, and Caroline was a complete angel baby and didn't cry one time. 

I sent Todd this picture and said, "Does this make you want another one??" His response was, "Haha... maybe..." Definitely makes me want to hold one! I am telling you, if Carson and Taylor were younger and we weren't feeling so settled, we would totally do it :) Either way, I'm looking forward to finally being able to travel and really enjoy time with Carson and Taylor now that they are older.

It's been such a fun, yet busy week around here, but I feel like it always gets really busy at the end of the school year.

On Wednesday, Taylor had Water Day at school and I was able to volunteer, and watch all the fun! Her class is so precious and all the kids are really sweet. I had so much fun watching them run around laughing and spraying each other down with water squirters. There was also a big bubble station and a water slide, but long lines aren't Taylor's thing so she stuck with running around and playing tag with the squirters! 

Carson had his last baseball game of the season Wednesday night. I can't tell you guys how much I enjoyed this season watching Carson and all of his teammates play. And seeing Todd coaching this year was so awesome, and I know it meant so much to Carson and Todd as well. I'm not sure if I ever told you guys this, but Todd has played baseball for many years, including four years of college on a scholarship. That being said, seeing Carson love baseball, and being able to coach Carson and his team brings Todd so much happiness! 

Taylor has become such an awesome little reader this year. Every night for about thirty minutes, she grabs her book and reads out loud to all of us...she's just beaming as we all sit in listen.
