No Mayo Chicken Salad......

Confession: I have never eaten or even tried chicken salad in my 28 years of living.
Crazy I know, but mayo makes me want to vomit! 

So I was on the search for a chicken salad with a base other than mayonnaise.
Pinterest you came through and saved the day again.

It was pretty much love at first bite, and Todd took the rest down for dinner last night. It's healthy and delicious this = win win!

( I know that kinda looks funky, but i promise it's good)!

Chicken Salad

Makes 3 sandwiches
Ingredients:
6 oz shredded chicken
1/3 cup dried cranberries
1/4 cup sliced almonds
2 green onion, sliced
2 small ribs celery, chopped
Dressing:
1/2 cup plain Greek Yogurt
1/2 teaspoon curry powder
2 teaspoons soy sauce
squeeze of lemon juice
salt, to taste
Directions:
Combine chicken through celery in a bowl. Mix dressing ingredients and pour over chicken mixture. Toss to coat. Serve!
