What I'm cooking / What I'm wearing

You guys may remember I started a series called 'What I Wore/ Where We Ate' a while back. Since going gluten free, we don't go out to eat as much as we used to, so I thought it would be fun to share more of what I'm wearing and what I'm cooking at home. 

What I cooked

 Recipe via - One Skillet Mexican Rice

And because I totally forgot to take a picture of the completed dish before we started digging in, I'm borrowing the picture via - making thyme for health.


And since I get a lot of questions about what my kids eat, I thought it would be helpful to include their plates in these post as well. 

They had beef and cheese tacos on gluten free tortillas, along with sliced apples to accompany the rice casserole. I'm happy to report that they both cleaned their plates.

And this rice casserole saves really well in the refrigerator for two to three days. I ate it for lunch two days in a row after I made it, and it was just as good as it was the first day. On day two, I added grilled chicken to switch it up and give myself some protein, but you could add any protein you wanted to, and it would be delicious with this dish. 


What I wore



I can't tell you guys how much I love this sweater, and it's adorable cuffed sleeves. It's the perfect weight for our Charleston winter, and it can be worn dressed up or down. For sizing reference, it runs on the big side and I'm wearing the xs.

We are mostly gluten free too (2/5 of us can't tolerate it) and I am so thankful for gluten-free substitutes when possible (like those wraps - my husband loves them!) or making more products from scratch. Cup4Cup allows us to still enjoy our favorite homemade bread, biscuit and cookie recipes without altering the flavor or texture! The hardest thing for me has been finding school snacks that aren't made with a million ingredients (mine are sick of popcorn). Please share if you have any great finds!

  2. Cup4Cup is a small slice of heaven for those of us who are gluten free, I agree with commenter above! That one skillet rice looks amazing!
