No Mayo Chicken Salad......

Confession: I have never eaten or even tried chicken salad in my 28 years of living.
Crazy I know, but mayo makes me want to vomit! 

So I was on the search for a chicken salad with a base other than mayonnaise.
Pinterest you came through and saved the day again.

It was pretty much love at first bite, and Todd took the rest down for dinner last night. It's healthy and delicious this = win win!

( I know that kinda looks funky, but i promise it's good)!

Chicken Salad

Makes 3 sandwiches
Ingredients:
6 oz shredded chicken
1/3 cup dried cranberries
1/4 cup sliced almonds
2 green onion, sliced
2 small ribs celery, chopped
Dressing:
1/2 cup plain Greek Yogurt
1/2 teaspoon curry powder
2 teaspoons soy sauce
squeeze of lemon juice
salt, to taste
Directions:
Combine chicken through celery in a bowl. Mix dressing ingredients and pour over chicken mixture. Toss to coat. Serve!

  1. Oooooo. I have a super-picky friend who pretty much has problems with most foods, especially mayo. Can't wait to try this out on her!! Really, I'm just looking forward to tricking her, but we'll keep that a secret! Thanks a bunch, deff can't wait to try.

  2. True Story: I used to make chicken salad with a can of chicken, a dollop of ranch dressing and a sprinkle of lemon pepper. This was post college. I know, right. Matthew almost threw up the first time he walked into my pantry and asked what the can chicken was for. I just hated mayo. I think this recipe might actually work though :)

  3. Sounds good! I hate mayo too. I make a yummy version with mashed up avocados, lime juice, cilantro, and hot sauce (also off of Pinterest).

  4. I am going to have to try this. I am the same way with mayo and therefore I also have never eaten chicken salad. I hate it it when I am at a shower or party and everyone is raving over the chicken salad, haha.

  5. You are not living up to your Southern Roots! I thought all Southern ladies loved them some mayo! ;-). I definitely love me some mayo. In moderation, of course. This recipe looks delish! I'm all about Greek yogurt these days!

  8. Thanks as I too can't stand mayo. I had made tuna with mustard, lemon juice, celery, pickles, red onion, and pickle juice.

  16. I love the olive oil mayo, but use Greek yogurt in my salads in addition to just a small dollop of mayo.
